At Chuy's, Tex-Mex cuisine comes with a side of Elvis

Artist Jeff Schaller's mural at Saul Good in Hamburg will be dedicated Thursday.

The menu at the new Chuy's is Tex-Mex, but it doesn't look like a Mexican restaurant.

Hubcaps hang from the ceiling, and there are metal palm trees in the dining room, along with a shrine to Elvis, but the menu offers authentic family recipes from South Texas, New Mexico and border towns.

Central Kentucky's first Chuy's opened Tuesday at 3841 Nicholasville Centre Drive, across the road from Bella Notte. The original Chuy's was created in 1982 in Austin, Texas, and the first Kentucky location opened in Louisville last year.
