Pecan lovers will delight in this cookie...buttery, crisp, loaded with pecans, and chewy with a bit of sweet to balance the savory notes.
Pecan Pie Bars (makes approximately 28 squares)
Ingredients:
2 cups sifted flour
2/3 cup sifted powdered sugar
3/4 cup butter, softened
1/2 cup packed brown sugar
1/2 cup honey
2/3 cup butter
3 T heavy whipping cream
3 1/2 cups coarsely chopped pecans
Directions:
1. For crust: Cut softened butter into sifted flour and powdered sugar until mix resembles coarse meal. Pat into lightly greased 13x9 pan so that you create a crust on the bottom and up the sides of the pan about 1 and 1/2 inches. Bake for 20 minutes in 350 degree oven until edges are light brown. Cool.
2. For filling: Bring brown sugar, honey, butter and honey to a boil over medium high heat. Stir in pecans and pour over cooled crust. Bake for 25-30 minutes in 350 degree oven. Cool completely before cutting into 2" squares. Store in tin between waxed paper.
