Flourless Peanut Butter-Chocolate Chunk Cookies

This recipe is for those of you who can't consume flour. Don't worry -- the cookies are delicious!

Flourless Peanut Butter Chocolate Chunk Cookies (makes 2 dozen)


1 cup creamy peanut butter

3/4 cup sugar

1 egg

1/2 tsp baking soda

1/4 tsp salt

1 cup dark chocolate chunks


1. Beat together peanut butter, sugar, egg, soda and salt.

2. Stir in chocolate chunks.

3. Use ice cream scoop to deposit rounded tablespoons of dough 2 inches apart on parchment paper lined baking sheets.

4. Bake in 350 degree oven 12 - 14 minutes or until puffed and lightly browned. Cool pan on a wire rack for 5 minutes before transferring cookies to wire rack.
