Salsarita's Mexican restaurant chain to open in Lexington

A chain of fast-casual Mexican restaurants plans to expand in Lexington in the coming years under a franchise agreement with a Paris couple.

Bill and Holli Gibson plan to open Salsarita's Fresh Cantina in the Hamburg area early next year, according to a news release.

They also hope to open two more Salsarita's restaurants in southern Fayette County and near the University of Kentucky by the end of 2016.

The Charlotte, N.C.-based chain, which has more than 80 franchise restaurants in 19 states, has two in Louisville and one in Owensboro.

"We first ate at Salsarita's in 2001, when we stopped at the Knoxville restaurant while traveling," Holli Gibson, who operates HHG Photography in Paris, said in a news release. "We were immediately impressed with the brand."

She said she and her husband, who works in the finance industry, went to Salsarita's in Jacksonville, Fla., and Louisville and now are "excited to bring the brand to our hometown."

The chain is expanding and plans to open at least a dozen stores in Kentucky during the next five years, five to seven of which are planned for Lexington and the surrounding area, according to the news release.
