Inspired by a documentary film, Lexington chef Jeremy Ashby will prepare a honey of a meal Feb. 21 and 22.
Ashby, executive chef at Azur Restaurant in Beaumont Centre, will include honey, honeycomb, mead, and pollen in dishes for a "Whole Hive" four-course menu motivated by the film Wings of Life. The movie, which explores the importance of flowers and their pollinators, is part of the 2014 Good Foods Board film series in conjunction with the Buckley Hills Audubon Society and Wild Ones Lexington.
The film will be shown at 1 p.m. Feb. 22 and 6:30 p.m. Feb. 24 at the Central Public Library Farish Theatre.
The Saturday matinée will be followed by a lecture, "Unlocking the Mysteries of Hummingbird Migration with Emerging Networks of Citizen Science Data," by Jason Courter, assistant professor of biology at Malone University in Canton, Ohio. The Monday evening showing will be followed by a panel of speakers, including Buckley Hills Audubon Society president Tony Brusate and Kentucky State Beekeepers Association president Tammy Horn.
Both movie showings are free and highlight local food-floral networks being established by community partnerships in the Bluegrass.
The menu features cast-iron baked Boone Creek creamery bread cheese with sunflower and poppy seed crust, hot pepper creamed honey, hoe cakes, and country ham; fennel pollen-dusted tangerine and saffron chowder with pickled fennel salad, coconut pillows, tempura scallop and honey-cured salmon; ham shank braised in mead wine and crusted with pork cracklings and honeycomb over white bean and venison sausage cassoulet and baklava with bourbon-honey ice cream and pecan honey.
The "Whole Hive" prix fixe meal is $45. Azur is at 3070 Lakecrest Circle. Call (859) 296-1007 or go to Azurrestaurant.com.
