Lucie Allen took her first step toward becoming a famous chef Tuesday afternoon, winning the Great American Pie Contest held at Cheapside Park.
The 10-year-old took out numerous adults when she claimed the top prize in the non-professional division with her Easy Fruit Cheesy Pie. She won a $150 gift certificate to Meijer and a crystal trophy that she plans to display in her bedroom. “It was really exciting,” she said. “I was really surprised, because some of the adults looked really serious and they thought they were going to win. I didn't think I was going to win.”
Ingredients:
Pie crust:
15 graham cracker squares
4 Tb. melted unsalted butter
3 Tb. sugar
¼ tsp. ground cinnamon
Filling:
2 8-oz. packages cream cheese
¼ tsp. lemon zest
1 14-oz. can condensed milk
3 Tb. lemon juice
Seasonal fruit — strawberries, blueberries, raspberries
Directions:
Preheat oven to 350 degrees.
Make crust: Crumble graham crackers in zip-top bag. Pour into mixing bowl. Add melted butter, sugar, and cinnamon, and mix together. Pat the mixture into a 9-inch pie pan using a wooden spoon. Bake at 350 degrees for 6-8 minutes, until crust is firm. Place on cooling rack for about 30 minutes.
Make filling: Whip the cream cheese until creamy. Add lemon zest and juice and blend until smooth. Spoon into pie crust. Chill in refrigerator at least 3 hours. Add fruit topping and serve. Enjoy!
Allen said she grew up around her Aunt Lucie Meyers' restaurant, A La Lucie, and wants to be a chef.
She has been working with her Easy Fruit Cheesy Pie recipe for about a year and half. She got the recipe from a cookbook called Sweet Treats, sold by Williams-Sonoma. The pie is a chilled cream cheese pie covered with raspberries, strawberries and blueberries.
“I've been making this pie for a while and was more experienced with it than other pies,” she said.
She said she tweaked the original recipe by adding more lemon juice and lemon zest. She also used different berries.
Lexington resident Debra Vogt won second place in the non-professional contest with her coconut pie, and Don Willoughby took third with an apple pie.
Kristie Eubank's rhubarb pie was named “prettiest” of the competition. Missy's Pies beat other challengers in the professional category with a Vanilla Girilla pie.
