Grimaldi’s Pizzeria will open Aug. 11 at The Summit at Fritz Farm at 118 Marion Suite 110, offering coal-fired brick-oven pizza. The restaurant, with its signature red and white gingham tablecloths and black-and-white photos of Brooklyn, will have nearly 4,700 square feet of indoor and outdoor space, including a 48-seat covered patio with heaters and fans, and a main dining room for 128, according to a news release.
Grimaldi’s will be open 11 a.m. to 10 p.m. Sunday through Thursday, and 11 a.m. to 11 p.m. Friday through Saturday, joining other restaurants at the retail and living development at Nicholasville and Man o’ War Boulevard, including Honeywood from chef Ouita Michel, J. Alexander’s, Shake Shack, Steel City Pops, Ted’s Montana Grill and Blue Sushi.
According to the company, Grimaldi’s offers authentic homemade New York-style pizza, calzones and antipasto, salads, cheesecakes and desserts. Grimaldi’s Pizzeria will have a full bar for cocktails, craft beer and a robust wine list, including its signature Mille Gradi red blend, produced by Rocca delle Macìe winery in Tuscany, Italy.
The open-kitchen restaurant will showcase hand-tossed pizza-making, and its coal-burning oven, heated by 100 pounds of coal a day, will cook the pizzas at 1,200 degrees for a smoky-flavored thin crust.
