■ Lewis Shuckman, owner of Shuckman's Fish Co. and Smokery in Louisville, has created two products to add to his lineup of smoked fish and caviar: salmon bratwurst and salmon breakfast sausage.
The company has been in business for 94 years, Shuckman said, and his father and grandfather used to make sausage.
"You see chicken sausage and turkey sausage, and salmon sausage has been around for years on the West Coast, Canada and Alaska," Shuckman said. He started playing around with the idea of making his own salmon sausage about a year ago and introduced it to the Louisville market four months ago.
It's available in Lexington at Good Foods Market and Café, 455 Southland Drive.

■ Holly Hill Inn in Midway has a new project for those who want to learn about — and sample — bourbons. Ouita Michel, chef/owner of Holly Hill Inn, said the mission of the 1785 Bourbon Society is to educate bourbon drinkers from novice to aficionado about topics such as palate training, mixology, food pairings and cooking with bourbon, as well as the spirit's fascinating history.
Tim Knittel, professional bourbon educator and former general manager of the culinary program at Woodford Reserve Distillery, will lead the 1785 Bourbon Society. Events will include tasting classes throughout the year, bourbon-themed dinners at Holly Hill Inn, presentations by distillers and field trips.
