Ways to $ave Wednesday -- Cheap, easy meals

A few weeks ago several of you mentioned some topics you'd like for me to cover. One of those was suggestions for recipes. That inspired me to develop today's blog. I am not much of a cook, I don't like to spend hours in the kitchen, I work full-time, and I have very picky eaters as family members. Due to all of those factors, I look for recipes with simple and very few ingredients. Specifically, if a recipe has more than five ingredients I begin to consider passing on that one.

There are several reasons for this. The pickiness in my family causes several recipes to be eliminated immediately if one of the ingredients is a "no no."  And, I hate purchasing numerous ingredients for one recipe as this can get expensive and I will likely not use nutmeg or rosemary in any other recipe, so what is the point of purchasing those?

So, here are some of the favorite cheap and simple recipes we often have on our family menu. None of these recipes were originally created by me. Most I have discovered these from others and if I remembered where that was I would tell you all, but I don't remember so I won't.

Meat Cupcakes

Ingredients: 1 lb ground beef, 1/2 cup ketchup, 1 tablespoon mustard, 2 tablespoons brown sugar, 1 can of Grands biscuits, 1/4 cup shredded cheese

Directions: Preheat oven to 400 degrees, brown the beef and drain. Mix ketchup, mustard, and brown sugar together. Add sauce to the beef. Separate each Grands biscuit in half and form the dough into muffin pans sprayed with cooking spray. Spoon the meat into the dough cups. Bake at 400 degrees for 10 minutes or until the biscuit dogh looks done. Sprinkle tops with cheese.

Cheeseburger Pie

Ingredients: 1 lb ground beef, 1 cup chopped onion, 1/2 teaspoon salt, 1 cup shredded cheese, 1/2 cup Bisquick, 1 cup milk, 2 eggs

Directions: Heat oven to 400 degrees, spray 9 inch glass pie plate with cooking spray. Cook beef and onion until beef is brown. Stir in salt. Spread beef mixture in pie plate. Sprinkle with cheese. Stir remaining ingredients in a small bowl with whisk until blended. Pour into pie plate over beef and cheese. Bake 25 minutes.


Pizza Loaf

(This one came from Chubbie Chica, but can be adapted in any way)

Ingredients: 1 can refrigerated pizza dough, 8 oz Part Skim shredded mozzarella cheese, 34 slices turkey pepperoni, 1 egg white, 1 teaspoon dry mustard, 1 teaspoon garlic salt, 1 teaspoon pepper, 4 teapoons Italian seasoning

Directions: On sprayed baking sheet spread dough to a large rectangle. Sprinkle with seasonings, then cheese, then pepperoni. Roll loaf length wise, pinch ends. Place seam side down, brush with egg white. Bake 30 minutes at 350 degrees. Dip in pizza sauce.


BBQ Chicken Potatoes

(This is an original Jessica recipe, inspired by one of my favorite BBQ restaurants)

Ingredients: 3-4 boneless skinless chicken breasts, 2 bottles of bbq sauce, 1 large baking potato per person, shredded cheddar cheese, sour cream, butter

Directions: Put chicken breasts in crock pot, pour bbq sauce over chicken and pour water in crockpot to cover the chicken (I use the empty bbq sauce containers to do this). Cook on low in crock pot for 6-8 hours (this usually cooks longer in my house since I am gone about 10 hours for work and it turns out fine). When chicken is done, use two forks to shred the chicken. Cook baked potatoes (I do this in the microwave, 2 large potatoes for 12-15 minutes. Open baked potatoes, put any toppings you want into potato (cheese, butter, sour cream, etc.). Then place chicken on top of the potato. Use bbq sauce as desired.

Smokey Mountain Chicken

Ingredients: Boneless Skinless Chicken Breasts, BBQ sauce (18 oz), Swiss Cheese slice, Pepper

Directions: Bake chicken breasts in oven until done (25-30 minutes at 350 degrees). In the last 10 minutes of baking smother chicken in BBQ sauce. In last 5 minutes, place swiss cheese slice on each chicken breast with a dash of pepper.

Meatball Bubble Biscuits

Ingredients: Can of biscuits, each biscuit separated in half, 10 frozen meantballs thawed and cut in half, 2 sticks of string cheese, Italian seasoning, garlic powder, Parmesan cheese, marinara sauce

Directions: Preheat oven to 375 degrees. Squash each biscut half flat and thin. Place a meatball half and piece of string cheese into the biscuit half and seal. Place it seam side down on a round, ungreased pan. Sprinkle the tops with Italian seasoning, garlic powder and Parmesan cheese. Bake 20-25 minutes. Serve with marinara sauce for dipping.


Easiest Peanut Butter cookies EVAH!

Ingredients: 1 cup peanut butter, 1 cup sugar, 1 egg

Directions: Heat overn to 375 degrees, Stir peanut butter, sugar and egg in large mixing bowl. Roll dough into 1 inch balls. Put sugar on a plate and roll balls into it to coat. Place 2 inches apart on ungreased cookie sheet. Press each ball down with a fork in a criss cross shape. Bake for 10 minutes or until cookies are done.
