Chef Big Shake Shawn Davis is bringing his hot chicken, world famous shrimp burgers, catfish and shakes to Lexington. He plans to open Big Shake’s Hot Chicken on Broadway near the Cook-Out.

Davis said he plans to open in early March. This will be the first of three Big Shake’s Hot Chicken restaurants he will open in Lexington. Davis couldn’t comment on where the other locations will be. He also plans to open six more restaurants around Nashville, where he already has two.

Davis appeared on Shark Tank with his shrimp burgers in March 2011 but couldn’t get a nibble. Afterward, he was approached by angel investors who offered him an even better deal than he pitched the sharks. That enabled him to develop products for grocery stores like Kroger.

Now he’s concentrating on building up the restaurant business.

This is the second hot chicken restaurant coming to Lexington, following Joella’s Hot Chicken of Louisville. Popeyes Louisiana Kitchen also is moving back into the market.

Why hot chicken is suddenly the hottest trend since sliced bread?

“I don’t know why – it’s always been in Nashville, like thin crust pizza in New York,” Davis said. “I think people are just starting to realize how good it is.”

He said the ingredients and recipe are what make his chicken so special.

“My recipe is four generations old,” Davis said. “The blend of spices are not common to a lot of hot chicken places – we use our own special blends with proprietary levels of hotness. Our hottest level, you have to sign a waiver – we had a lot of people try, very few who survive.”

Big Shake’s menu also includes shakes, including Oreo and Butterfinger, as well as traditional flavors.
