Ingredients

  • 1 (8") flan mold
  • 5 Tbs. granulated sugar
  • 8 large egg yolks
  • 1 7 oz.) can sweetened condensed milk (La Lechera)
  • 1 (7 oz.) can evaporated milk
  • 2 tsp. fresh lemon juice
  • 1 tsp. salt
  • 1 tsp. pure vanilla extract

Instructions

Heat oven to 375ºF. To flan mold, add sugar and heat over low heat. Melt sugar until it turns from clear into an amber, golden brown, color, about 6–8 min. Tilt mold from side to side to cover bottom, but do not allow sugar to burn. Remove from heat and set aside.

In medium mixing bowl, add egg yolks and gently break and combine yolks, do not over-mix. Gently stir in condensed milk and then evaporated milk until just combined. Stir in lemon juice, salt and vanilla. Strain mixture 2 to 3 times through a fine strainer to eliminate air bubbles. Next, make one last pass through strainer directly and slowly into prepared mold. Cover mold with foil (or use lid). Place your mold in a larger baking dish. Boil water and pour into larger dish, to surround mold halfway up sides with water. Be sure to pour water in after mold is already in dish, or else water may overflow. Bake for 40 min., or until firm and golden crust is brown on top. Once done cooking, allow it to cool and then chill for 2 hrs. for best results. Y Listo and Enjoy!
