Marriott City Center hires chefs for two restaurants. What can we expect on the menu?

The culinary framework is taking shape for for the new hotels coming to downtown Lexington.

The Marriott City Center Hotels will have two main dining areas, The Greatroom Restaurant and Bar on the main floor and the Infinity: Skybar & Cafe by the swimming pool on the roof of the Residence Inn.

According to Marriott’s reservations web site, the hotels are opening soon.

Lexington-native Jonathan W. Henderson has been named chef of Infinity, which will have a menu that draws on his work around the country, from Kiawah Island Resort at the Sanctuary to the French Laundry in Yountville, Calif., and New Orleans.

Henderson, who now lives in Versailles, said his cooking philosophy boils down to ingredients, technique, execution and consistency.

The Marriott City Center Hotels also announced that Tyler Donahue has been named pastry chef for The Greatroom, the Infinity Skybar and the meeting and events at the hotels. Donahue is a native of Versailles and brings experience at three Ritz Carlton hotels to Lexington.

“I am passionate about fresh produce, local flavors and constantly pushing the creative boundaries to develop and execute new and exciting menu items,” Donahue said in a release. “I’m excited to bring my luxury pastry expertise to Lexington and build a program that leaves a lasting legacy on the Bluegrass area.”

They join executive chef TJ Harville, a Winchester native and formerly executive chef at the Lexington Hyatt Regency, who is creating the menus for the new hotels, which will have a combined 336 rooms.

The hotels are part of a $220 million mixed-use development by The Webb Companies, in partnership with the Greer Companies.

In the spring, another dining destination from the Greer Companies is scheduled to open in the development. ItalX, an avant-garde Italian restaurant featuring chef Jonathan Lundy will anchor the corner of Main and Upper.
