The breakfast burrito is unquestionably a popular breakfast menu option here in Kentucky.

Said by some to trace its roots all the way to Tia Sophia’s, a small cafe in Santa Fe, N.M., where the term first appeared on the menu in 1975. Others say hungry folks had been placing meat, eggs, potatoes, and cheese into tortillas in the southwest United States for their first meal of the day long before that.

No matter, there is no right or wrong way to make a breakfast burrito, or perfect combination of assorted ingredients to include, however, several local restaurants here in Lexington are going above and beyond with their current offering — crafting mouth-watering signature breakfast burritos that are sure to keep you coming back again and again.

Prepare to loosen your belt after dining. The breakfast burritos in this guide and list are as large as your appetite, and each is respectively a bit different and definitely delicious.

Starting with a base component such as a pillowy soft warm flour tortilla in most instances and then stuffed with a variety of savory, satisfying ingredients like fluffy scrambled eggs, salsa, hot pepper sauce, potatoes, onions, peppers, avocado, beans, bacon, sausage, or ham, cheese, and more — there is something for every taste.

A breakfast burrito from a bike shop? Yes, race on in. Simply named the Breakfast Burrito, it is made with two local Clark family farm eggs, local chorizo or bacon, smoked cheddar and mozzarella blend, avocado, potato, and a zhoug sauce (cilantro, jalapeño, garlic, cumin, cardamom, red pepper flakes and olive oil for a special kick), grilled in a flour tortilla with house-made salsa verde. ($12) Vegan option also available.

Known for their vegan, vegetarian and gluten-free offering, you cannot write an article about burritos in Lexington without including GirlsGirlsGirls. Available during brunch, the Birria Burrito is made with birria braised short rib, Elote corn crema, crisp potatoes, scrambled eggs, flour tortilla and hatch chili queso. It comes with your choice of a side including stone ground grits, skillet potatoes, buttermilk-jalapeño skillet cornbread, biscuit and gravy or fruit cup. It is a massive, deluxe, delicious burrito. Stella’s offer’s four choices when you’re craving a burrito for breakfast. There’s the House Burrito with organic local eggs, Jack cheese, black beans and rice ($9.95); Veggie Burrito with grilled veggies, vegan cheddar cheese, black beans and rice ($9.95); Carne Burrito with chopped sausage, bacon or hickory smoked ham ($10.95) or the Chorizo, Potato and Egg Burrito with local chorizo, organic eggs, potatoes, jalapeños, Kenny’s Jack cheese and choice of sauces. ($10.95) A 20% service charge is added to every order.

The Sausage Breakfast Burrito is aptly named, stuffed with Stone Cross Farm breakfast sausage, scrambled eggs, pepper jack cheese, crispy home fries and a proprietary spicy sauce (tastes like chipotle mayo?) in a griddle jumbo tortilla, served with Weisenberger Mill cheese grits. ($9.99)
