“Jaggers is a Texas Roadhouse-owned brand and similar to Texas Roadhouse, everything’s scratch-made... We’re hand-breading all of our chicken, and we are cooking from scratch with fresh ingredients. We are burgers, chicken, salads and shakes,” said Griffin Paulin, managing partner. “We’re just happy to be in Lexington.”
Paulin said more locations are planned with the next Jaggers likely opening in 2026.
The new restaurant has a double drive-thru for fast service, as well as seating inside for more than 80, and two covered picnic tables outside. Catering and large orders also are available.
Paulin said that what distinguishes Jaggers from other chicken and burger restaurants is quality.
“Our burgers are, if not the best, among the best. We double-stack at all times. If you want a single, you can get one,” he said. “Everything’s made to order.”
Founded in 2014 by Texas Roadhouse founder Kent Taylor, Jaggers has been growing with multiple locations in Kentucky, Indiana, North Carolina and, soon, Texas. The Lexington location is the fourth in Kentucky and the 16th nationally.
