After 14 years, big changes are coming for a popular Fayette Mall restaurant

A big change is coming to a popular Fayette Mall restaurant.

And it will mean changes for Lexington diners as well.

Saul Good Restaurant & Pub, located at 3801 Mall Rd., behind Fayette Mall, has been sold.

Founders Rob & Diane Perez announced Monday that the restaurant they opened 14 years ago and that used to have three locations has been sold to JR Restaurants, owned by Lexington local Josh Rubin.

Saul Good opened its first location near the mall before adding locations downtown on the corner of Broadway and Short in what as then called Victorian Square and at Hamburg.

The Hamburg location closed in early 2020 before the COVID pandemic; the Broadway location closed in 2022.

“I am humbled as I look back on how the community has supported Saul Good from the beginning 14 years ago. It was a great adventure, and I am proud to have helped create a local staple. I am excited for the new direction Saul Good is headed,” said Rob Perez, in a statement. “It’s no secret that things have been tough in the industry, and I am so glad that the legacy, staff and reputation of Saul Good gets to stay intact; and even get a new lease on life.”

The Perezes also own two DV8 Kitchen locations and DV8 Bakery, which are not impacted by the sale.

“When I saw the opportunity to own a locally owned restaurant with a reputation for having great food and a better team, I jumped,” Rubin said in a news release. “We’re going to build on what Rob and Diane built, and grow to become known for a restaurant that has great food, great drinks, and goes above and beyond to take care of its employees.”

Rubin said he plans to update the menus and the decor, with more changes coming as they evaluate what works. He’d love to expand the hours and the bar program.

Rubin sold a marketing company last year and this is his first restaurant venture.

“I’ve worked in restaurants in the past and it’s always been my dream to own a place where people like me could become regulars,” he said. “I’m committing to a long term lease and to making Saul Good a destination in town again and restoring what was lost in the pandemic.”
