New restaurant alert: Build-your-own tacos, margaritas and more coming to The Summit

Lexington, hold onto your salsa because a new taco joint is coming to town.

Condado Tacos, a build-your-own taco concept, will be opening its first Kentucky restaurant at The Summit at Fritz Farm off Nicholasville Road. The chain was founded in Columbus, Ohio, in 2014 and has been expanding throughout the U.S.

The restaurant is expected to open in early September, according to spokesman Josiah Smith.

“We’re very excited to be coming to Lexington,” Smith said on Tuesday.

According to a map of The Summit, the new restaurant will go into the spot formerly occupied by Edley’s Bar-B-Que, near Shake Shack and Origin Hotel.

Edley’s closed in March 2020 as the pandemic shut down restaurants and bars across Kentucky.

The 3,600-square-foot restaurant will have a casual atmosphere enhanced by floor-to-ceiling murals painted by local artists and the core Condado Art Team, referencing local landmarks and city features.

There will be no drive-thru but the restaurant will offer curbside pickup. It will be open for lunch and dinner, with brunch a possibility in the fall, Smith said.

There will be margaritas, sangria and beer to go with the taco menu.

You can go with Condado’s suggestions or build your own off the menu. Choose from different shells, bowls or nachos, almost a dozen different proteins and a dozen toppings. Besides chicken and ground beef, there’s chorizo, steak, braised beef brisket and vegetarian and vegan options, including veggie chorizo and barbecue jackfruit.

You also can choose from almost a dozen salsas and sauces, ranging from pineapple salsa to “Dirty Sauce,” listed on the menu as “VERY HOT.”

Condado Tacos is the second new restaurant to announce that it is coming to The Summit this year; Buzzed Bull Creamery, which specializes in flash-frozen ice cream that can have an alcohol kick, is expected to open this summer.

Brian Voyles, general manager for The Summit at Fritz Farm, said dining out is picking up again.

“Customers are excited to dine out again. We continue to see increased foot traffic to eating establishments as more people become vaccinated,” he said in a statement. “While the pandemic left fewer food concepts nationwide, the brands that were able to successfully adapt their business model to accommodate curbside pickup during quarantine will continue to be successful.”
