More gourmet biscuits and mimosas coming to Lexington? Yes, please.

Biscuit Belly, a gourmet brunch restaurant, is expanding in Lexington.

Two new locations will open, according to the Louisville-based chain.

Franchisees Shoffner Family Foods, who opened the Biscuit Belly on East Main Street last year, are planning to open one at 112 Lucille Dr. at Leestown Road/Great Acres, and another at 4235 Harrodsburg Rd. in the Ethington Shops.

The Leestown Road location is expected to open in late summer and the Harrodsburg Road location is expected to open in early 2024, according to Biscuit Belly.

Shoffner Family Foods includes sisters Madison Shoffner and Mallory Shoffner Quintero, and parents Jay and Kelly Shoffner, according to the news release. The family has a long and successful history in the franchise restaurant world.

Their grandfather, J. Roy Shoffner, was among the first Kentucky Fried Chicken franchise owners, eventually growing to open and operate 34 KFCs and 10 Long John Silver’s locations in Kentucky, Tennessee and Indiana.
