A new-to-Lexington breakfast and brunch chain inspired by Mexican cuisine is coming to Lexington.
Con Huevos is planning to open its first location outside Louisville this fall in the Hamburg area on Pleasant Ridge Road, according to an announcement. A specific address has not yet been released.
The restaurant owned by husband and wife team Jesus Martinez and Ismene Peredo Martinez opened in 2017 and now has five locations in Louisville.
“We chose Lexington because it felt like the most natural and meaningful next step for Con Huevos. Louisville is our home, and before expanding too far, we wanted our first city outside Louisville to still be here in Kentucky, where people understand hospitality, community, and good food,” Jesus Martinez said in a statement.
“Lexington has a beautiful mix of families, professionals, students, visitors, and people who really enjoy breakfast and brunch. It is a city with energy, growth, and a strong sense of local pride,” he said. “That makes it a perfect place for a brand like Con Huevos, because we are not just serving breakfast — we are creating a place where people can start their day feeling happy, welcomed, and connected.”
What’s on menu at Con Huevos?
Known for its breakfast and brunch favorites with spicy touches, Con Huevos is typically open Monday through Friday, 7:30 a.m. to 2 p.m., and Saturday and Sunday 8 a.m. to 2:30 p.m.
The menu includes eggs, of course, plus tres leches pancakes, churro waffles and French toast, as well as breakfast sandwiches on brioche, brunch burritos, frittata Mexicana, chilaquiles, enchiladas con huevo, breakfast tacos and more.
For lunch, street tacos and other Mexican dishes are available.
Cocktails such as their Guadalajara morning mimosa are available as well as Cuban coffee, Mexican chocolate and Oaxacan lattes.
Gluten-free and vegetarian options also are available.
More details on timing and exact location will be announced later this year.
