After delay, Blue Sushi restaurant opens at The Summit

Blue Sushi Sake Grill opened Thursday at The Summit at Fritz Farm, at Nicholasville and Man o’ War Boulevard. The grand opening had been scheduled for 4 p.m. Wednesday but was delayed at the last minute.

The restaurant serves sushi and other Asian-inspired cuisine.

Regular hours will be 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, and 11 a.m. to 11 p.m. Sunday.

Happy hour is 3 to 6:30 p.m. Monday through Saturday and noon to 8 p.m. Sunday. There will be sushi lunch specials 11 a.m. to 2 p.m. Monday through Friday, half-price premium cold sake bottles on Tuesday, and four crunchy rolls for $5.50 on Thursday.

This is the third restaurant to open this month at The Summit, a $156 million mixed-use development that is projected to have more than 60 restaurants and retailers, many new to the market.

Other openings this month included CRÜ Food & Wine Bar and Grimaldi’s Pizzeria. Babalu Tapas & Tacos also is scheduled to open this month.
